Beef and lamb are so much more harmful to the environment than other proteins that we can make a lot of headway by just encouraging people to eat more pork, chicken, and fish. Eat a pork chop once in a while instead of a steak and so on.

American culture is downstream of British culture, which traditionally didn't use spices much. then after the great depression canned veggies that were cooked by boiling was the preferred method, and that made them taste gross.

Unambiguously correct. One of the most impactful things anyone can do politically or environmentally is go vegetarian. But Americans love burger. Meat is masculine coded and in fact a big part of masculine identity for millions.

I've actually tried to game out how to accomplish vegan political objectives without generating too much backlash; I think one way to do it is to repeal agricultural gag laws and then ride the backlash to impose strong animal welfare laws that have the effect of dramatically increasing meat prices
