My wife is amazing, and she bought me a cheese making kit for Christmas. There are a lot of steps in making some of these cheeses, and the one we have decided to make first is the most complicated one. We spent $14 on 1 gallon of milk, because we need non-homogenized milk. In the US, hard to find.

I'm not an expert in the kitchen, I'm sure plenty of people have a lot more experience in cooking than I do, and could tell me plenty of things I'm doing wrong. But if you're making gumbo, you need a dark roux. And this is an exercise in patience.
