This is why "how many genders are there, huh?" is such a dumb question. It's like asking exactly how many colors exist. Even blue is a fuzzy category, why would you expect human beings to be simpler than photons?
The reality is that reality and nature are rarely rigidly binary. Almost everything's a spectrum. Nothing is ever as simple as it might first seem. And people locked into rigid ideas of categorization will always end up being wrong. The universe is far too flexible for that.
