Far less braising, stewing, cooking to well done

Why? Lots of changes to sanitation/hygiene

We worry about pork because we KNEW that was a heat issue. Funny thing is the US hasn't had a case of trichinosis from commercial port in ~70 years. We could eat it rare.
SO MANY KIDS used to die

Improvements in sanitation and vaccines were big, but pasteurization had a big impact too

Pasteurization wasn't mandatory in the US until after WWII (exact year depends on the state)

My great aunt’s DAR application was rejected the first time because the ancestor she named turned out to be a British loyalist but accepted the second time. My most recently immigrated ancestor came to the US in the 1840s.
