#Einkorn
Einkorn is a wheat grown in Italy that is non-GMO and wheat as it was in the old days. It’s very earthy tasting and makes a very dense bread. I’ve made sourdough with it 100% and mixed with other flours. It’s challenging to work with. A company called Jovial sells it in the US.

I used half whole-wheat, half spelt. I’ve not heard of einkorn. Do you know what it is?

I've been making Norwegian einkorn bread that has a very similar baking process as your ancient loaf. Including the use of sourdough starter and no added yeast.
But ive discovered, after trial and error, that using a heating pad on low over the top of the bowl towel has improved the rise & density

Gonna make some einkorn and whey biscuits. Not as like a trad protein thing but as like a whole grain flour doesn't keep well and I've got whey to use up after making ricotta from rescued milk

Our daughter keeps expanding food horizons. I am happy to get such good food. I think she realizes the list of restricted items is short but important. This is a smoked salmon from Norway accompanied by local Einkorn bread, Laughing Cow light cheese. The soup is red lentil, one of my favorites.

Central Cali sourdough baker here, too. Have some rye in the freezer(somewhere!) & the last einkorn/WW was too dry, maysub some wheat and soaked chia for some of it, for Sunday's loaf...thanks for the idea.

Wow! I love the look of this! I have never used whole wheat in a sourdough loaf. I do use a starter that is made from Einkorn.

I was happy with the bread from today, it was 500 g KA bread flour + 200g KA whole wheat flour. (and 135 g starter), I am thinking I will mix with ancient wheat flour (Einkorn, Spelt) next.

You may want to look into einkorn bread, which is the wheat that we used before modernized farming.

People with gluten intolerance have been able to consume it without issue, also has a much lower effect on blood sugar too

i’m sorry. i have family with the same condition. the loaf above is most certainly wheat from the 1960s which is a dwarf variety that trades high yield for digestible endosperm. so many suffer from this…. i’ve been experimenting with einkorn and sorghum (both gluten free) with really good results ✊🏽

This year’s attempt at making sugar cookies I can eat. Used einkorn flour again but this year iced them with Swerve’s confectioners sugar.

Um. No. Just no. Way too sweet sweet for me. If I package an iced cookie with one not so iced then I can stomach it. A bit.
