As popular as “life sims” like Stardew Valley and Animal Crossing New Horizons have been, they really haven’t come close to filling the need for that specific kind of game

This is absolutely true. the sims is also where the last bastion of maxis is as a studio. Some of the people working on the sims have worked for maxis for decades. The knowledge they’ve collected, along with the unique spirit of that studio, can’t easily be replicated.
I also imagine it has the Binding of Isaac problem where only one game actually offers you the thing Binding of Isaac does, and you're not going to get that from other titles. Other roguelikes are great but they cannot do item interaction the way it does. See also, Sims

People have tried but it turns out making a game that compellingly simulates human life is hard, and all the people who are good at it are on the sims team
