Making sourdough loaves brings me a lot of joy. It also brings me a lot of anxiety. And so I've decided to mix up my process again 😕
I'm gonna try a 1:2:2 mix just before bed and hopefully it'll be good to start making up when I get up for the dogs. It might be too long, but it's chilly at the mo.

I spent yesterday freaking out about a sourdough loaf I was making as I'm trying some new things.
This morning I freaked out as I'd not turned the over down after pre-heating it, then realised I didn't put the timer on... only to find out I hadn't even put the loaf in yet.
The loaf turned out flat.
