Today my husband and I went to the mall and lived to tell the tale. It was packed. Parking was a challenge. We weren't expecting that. It was worth it. We traded Christmas cash for an 8-quart Le Creuset oval dutch oven. If you want one, they're on sale right now for $299. The other sizes aren't.

US bombed Nigeria in what Trump says was an effort to protect Christians.

Violence in Nigeria is widespread, not anti-Christian specifically, and the US strikes won't accomplish anything lasting. But it appeals to his evangelical base even as he persecutes other Christians.

Ladies and gentlemen, I just spatchocked a chicken for the first time in my life--and I don't even own poultry shears.

I'm also roasting said chicken in a Le Creuset cast iron skillet instead of a roasting pan, which I've never tried before. It's a day of new adventures.

OK, it's Christmas in the kitchen. I just made a pitcher of homemade Irish cream (Smitten Kitchen) and now I move onto steamed cranberry orange pudding. This afternoon I'm roasting a whole chicken. I might spatchcock the chicken if I can figure out how. I don't own poultry shears.

My husband is all about safety. For Christmas, he gave me a rear vehicle sensor for my e-bike and a mobile phone holder for my bike as well. He also presented me with a dashcam and cell phone dock for my car. This is caring. This is love.

For some reason, Comcast Xfinity cannot manage to keep a bunch of channels intact on cable service in south Denver. These include Rocky Mountain PBS Create (248) and Paramount, among others. It's a system problem and for the egregious cost of that service, Comcast really should fix it.
