We're agog at amount of oil called for in almost every carrot cake recipe. Here again it's over 1 cup.
We freeze packages of grated carrots. When thawed, we end up with lots of water/juice + actual carrot.
We substitute ALL the carrot liquid for ALL the oil, 1:1 ratio and it's moist/delicious
