There was some good looking beef shin on the Whole Foods butcher counter earlier, so that + its marrowbones are in the pressure cooker with red wine, Dijon, baycarrotsceleryleek. Either cavolo nero or a little endive salad. Meanwhile, a watermelon + lime soda (no) + some Mini Cheddars (also no) 😳

possibly also cuz "nose to tail" cuisine got trendy. Marrowbones & organ meats are way more expensive than they used to be, too. even without factoring in how meat has gotten pricier in general. you used to be able to get a pound of marrowbones for $5 or less, now it's like 10

i once over-ordered beef marrowbones. lilly was delighted with the happy accident.
i may have tried to persuade my beloved that it was lilly who booped the extra bones into my basket after i turned my back to do something with the laptop still on the supermarket website.
LIlly didn't mind.

i still remember taking something like 3 whole days to make a batch of classic demiglace from marrowbones, froze it all in ice cube trays & then lost it ALL when my freezer door fell open while i was at work (8 day camp shift) along with... a lot of *seafood*, thank god for tenant insurance 😭

A story to make you feel better:

I made a big stew pot of pho. All the exotic spices, marrowbones, eight hours on Low, the works. Smelled like God spilled his cologne in my kitchen.

I put the uncooked rice noodles directly into the broth and turned it into a starchy gel.

I get my dog big bisected marrowbones for his dental health and whenever I give him one he just lies out in the yard next to it, guarding it from the birds. Truly demented behaviour.

In Austria and here in Bavaria, we enjoy Tafelspitz, that's topside or silverside of beef boiled with root veg, marrowbones etc, as you would make a bouillon. It's served with either hot or cold horseradish sauce, veg and potatoes of various forms. Any leftover meat is perfect for the salad
