I think im already getting enough catechins from the other foods I eat anyway. Probably good on iron too but I started drinking coffee again so that could change. Coffee also interferes with iron absorption !😭

Drinking green tea with lemon helps absorb catechins because of the vitamin c.. eating iron with vitamin c also helps absorption .. But drinking tea makes it harder to absorb iron from plants. So you have to not have tea at the same time lol

Think partly down to tannins being a whole family of compounds, not all of them behave the same. Dianhong's made to be smooth & brewing longer & cooler keeps the extraction gentle. The bud-heavy grades naturally have fewer of the punchier catechins too so they tend to stay sweet & low-astringency
