We are by no means "vegetarian" but I have successfully made meatloaf with 1/3 lentils or beans, with nobody saying a word or noticing. Cook them till soft, puree with immersion blender then incorporate with your meatloaf mix. I cook big batches of pulses and freeze a cup or two for later.
