Near the end, Michel Troisgros talks to a semi-retired winemaker who still keeps a hand in the business. The chef can understand because he's still in there every day. Then the winemaker says something extraordinary: He prefers his sons' wine to the wine he made. THAT is what I hope to become.
Restaurateur to diner on the wine: “I advocate for it to be obligatory to state the total sulfites in each bottle.” Of course I love this to pieces.
