So yummy. Smashed chick pea and / or tuna sandwich. Fresh veggies and layers of flavor. Add a crunchy chip and you’ve got a tasty meal.

I love fried eggs. I like them fried with chili crisp or with pesto, I like them fried with herbs and/or a little roasted garlic, I like them fried with spicy seasoning blends. But hands-down, my favorite fried egg, is simply with salt and pepper on a piece of buttered toast.

On our road trip on Saturday we were stopped near a Filipino restaurant, I knew I had to make pancit. Pancit is a Filipino vermicelli noodle stir fry with veggies and protein, I used tofu. Calamansi, a tart citrus fruit gives it brightness, plus there is soy for salt, sambal for heat, and veggies.

Tagliatelle pasta and meat sauce with mushrooms & spinach (I always like some veggie in my sauce.) I’m showing the label from the pasta as I’m enjoying finding new sources to explore. This was a heavier egg noodle that held up well to a good chew al dente. A comforting, belly filling dish.

Here's my stab at "trenchers," a middle-aged dish they would make which was usually beans or stew served on a stout bread that would also serve as the plate. I made some baked beans with sausage to serve on it. I think it came out pretty good.

Dinner indulgence. Sticky chicken wings (4 hours in slow oven; cola, onion, garlic, brown sugar, lemon juice, soy), salad (olive oil, lemon), & galaktoboureko (semolina custard, filo, syrup from wonderful Greek shop). When in Athens this was my #1 go-to dessert; they cooked them in big slabs
