As far as I know there is only one bad thing about onion soup….chopping the onions…😭. I use one sweet onion, yellow onions, one red one and a few shallots…

Bread today, my cycle seems to be every 10 days. It’s not sourdough but I make a poolish overnight, next day is dough making, stretch and fold, ferment about 4 hours, pre shape 1 hr, shape then leave it overnight in fridge, bake….
