~1/2 cup dry white wine simmered until reduced by half, ~1/2 cup heavy cream, simmer until starting to thicken, grate in 2-3tbsp pecorino or parm until desired thickness, stir in sausage to come to temp, then cooked pasta and whatever herb's in the fridge, finish with a squeeze of lemon off the heat
