Trying to find an old classic paper that was discussing how in science changes of scale induce a change of the rules, e.g explaining that chemistry is not applied physics, biology is not applied chemistry etc. Does it ring a bell with anyone ?

A question for membrane folks: should I expect a change of 3-5% percent in unsaturated fatty acids affect membrane viscosity? It is typically what people measure in cold shocks in bacteria but I find strange that such a small change would have an important effect
