Zucchini latkes are sooo good!
You'd need to skip the potatoes but here's a great recipe (i use sweet potatos instead of white in it but carrots could substitute for potatoes
If I'm pressed for time, i make it in a dish, kugel style. It freezes well, too.

Our food comes from all over. Like these grapes come from the country of Grapes. These carrots probably grow in another world. So did this lettuce. These potatos came from over fifteen hundred years ago. And these apples don't grow anywhere!
