This conversation is so interesting when it crops up because in order to BECOME a good enough self editor, you usually do have to be edited at some point to learn and to also be able to detach yourself from the work to really pick it apart critically. It's a skill that's hard to learn on your own.

As a "everything cicada" collector, I weirdly know a bit about these (is this one a wall pocket as well?). They come from France predominately and are vintage, made during the 30-50's mainly. I love them so much, they're so colorful and fun.

It came out so nice and hearty! Maybe the best polenta I've made (and I'm not saying that just because I didn't get splattered :D)

I added 1/2 cup of shredded cheese (I just used a jack/cheddar blend because I had it on hand), 2 generous pats of butter, and 1/8 cup or so of heavy cream and brought it all together.

While I was stirring the polenta, brushed the sauce over the ribs, popped them in the air fryer to crisp. Voila!

Once the sauce was thick and glossy (about 15 minutes of simmering, stir for the last 6) I set it aside and in the same pan with the frond still intact from the sauce, added 2 cups chicken broth, more garlic, brought it to a boil, then added 1/2 cup polenta and scraped up all that frond.
