That's basically why I devoured the EU books. There was so much more once you broke away from having to center the same handful of main characters.
The one Rogue Squadron book about Corran Horn getting captured and thrown in the possibly-mythical war prison? Loved it so much.

I don't think it's a coincidence that the best Star Wars stuff has featured mostly brand new characters, like Andor and early Mandalorian. They are just a political thriller and a cowboy adventure show but with cool Star Wars aesthetics.
