For anyone having this issue, myself and a friend found a quick fix.
On PC (mobile does not work), go to settings > Family Center. It'll ask you to enter your age.
Once this is done, you should get your adult status back without having to do any verifying.

So despite getting verified yesterday with my face scan (which Discord apparently struggled with) I went on this evening to find out the age verification has been dropped AGAIN
And going through the process again it physically won't let me select the 'done' option to finish the process
