Of all the wise things that Benjamin Sisko said on #StarTrek DS9, perhaps the most underrated is that "beets are a very misunderstood vegetable". Roasted sliced beets with goat cheese on top are amazing. One of the handful of vegetables I actually crave rather than just eat because they're healthy.

I wonder if there will be less of a gap in cost between farmers market produce and supermarket produce after tariffs. I bet they still use fertilizer that requires potash (sourced from Canada) so I doubt it, but would be curious if anyone with expertise in this area thinks.
