Non sequitur Sunday: one of the more interesting figures in modern Mexican art and history is Dr Atl. An intellectual, Painter, historian and much more.
I have tried to convince my friend @gustavoarellano.bsky.social to write a bio but so far have not had any luck.

St. Helena chef David Katz prepared this white bean and tuna salad with pickled onions. It's his adaptation of a favorite recipe by Marcella Hazan, using our Marcella beans of course!

To start out the new year, I wanted to share my rant from our last newsletter:

At this time of the new year, you'll be reading a lot of experts telling you about this superfood or that newly-named dietary poison. Set up your defense mechanism and remember that so much of this is click bait. (1/4)

Treat yourself, bean edition. I gave the gift of bougie beans to family this holiday season and got some for our household, too.

Tonight’s dinner is a take on chicken pot pie featuring a creamy mix of buckeye beans, carrots, and onions topped with sour cream and cheese drop biscuits.

Is this tech support? Good!
I have a Windows computer with files that I want to transfer to a Mac. I have a WD port hard drive that is "Windows compatible. Reformatting required for MacOS".
Can i use it to go from PC to WD Hard drive to Mac?

Thank you for being smarter than me.

😍
While I’m trying to decide which bean to soak. Rancho Gordo has a big variety of beans. There’s also a big section on their website with recipes. Of you’ve only used canned beans your missing out on he variety of taste. Being a bean snob is cheaper than being a wine snob.

Leftover magic.
Black caviar lentils, flaked cod, roasted red peppers, and because it's still the holidays, a pat of butter. All leftovers. All magic.

Raw Alabama jumbo pecans become a great appetizer when you drizzle with butter, salt, and Rancho Gordo Oregano Indio or Fatted Calf's Tutto Porchetta blend. Bake 10 mins, shake, 5 mins more, at 350F.

Every year for the past 3 or so years we've ordered 20 Big Ones from @ranchogordo.bsky.social, given away some for the holidays, and then spent these middle days on delicious bean dinners from what we call "the bean library." Seriously, folks. They're so good.

I know this won’t mean anything to anybody but I feel completely liberated giving up my digital watch. It dawned on me I don’t care about any of the data. And if I need it again, I’ll wear the watch for a short time. I exchange a battery once every three years or so and I know the time, stylishly.

I love caviar and you'd be wise to keep the serving bowl away from me, but I'd be very happy to eat these lentil appetizers as well.

I don't know if this is a tradition anywhere in Mexico, but this strikes me as a generous, somewhat easy to execute Christmas dish. I've been making trial runs, and my family has loved it. I guessed that this recipe would serve 4-6 people, but this made my mother laugh.

I’m not sure everyone would agree, but I think good fresh mozzarella cheese is better than industrial queso Oaxaca here in the US.
Fresh mozzarella makes an incredible quesadilla. Good salsa never hurts either!

Cabbage and beans may not be the most glamorous duo, but they have a lot of chemistry! Some of their greatest hits: roasted, shredded in a salad, or braised in a soup, like this one or the one below. We gave this hearty soup a flavor boost with a spoonful of miso and a drizzle of chile oil.
