Note: I know the recipe SAYS 3lbs of potatoes feeds 8 people but, and I can't stress this enough, that is for 8 POLITE servings for 8 POLITE dinner guests. For a holiday FRENZY family meal with help-yourself-mashed-potatoes you are will need at least TEN POUNDS to tuck into or all is lost.
