I could be wrong about this but I really think most Americans do not want to be forced to “do their own research” about food & drug & product safety and would rather that the government agencies that have been sorting that all out for them for decades not be obliterated in the name of “efficiency.”

As I have worked in the spice trade for 20 years I am all about selling some spices. But eliminating onion from guacamole and replacing it with onion salt is a bridge too far. C’mon McCormick, be better.

Food poisoning on an institutional scale is getting to be a real worry of mine. I have tips. I have worked in food manufacturing for 20 years. I also lived in a place where large scale refrigeration was not quite a thing yet. I bought never cooled meat otr.
The reason why older generations burnt the shit out of their meat and boiled the shit out of their vegetables, was your kid died if you didn't.
