I am suddenly reminded that ancient humans would preserve meat by submerging it in arctic ponds. Lactobacillus bacteria, the same bugs responsible for turning milk into yogurt, would quickly invade the meat, tenderizing it and preventing colonization by disease-causing bacteria. So, Meat Yogurt.
