It tickles me that tonight's meal is entirely around the fact that Waitrose gave our neighbour a free bag of watercress 🤣

Bit disappointed it comes from Portugal, as did the pears I bought

We were going to have sausages, put them off until tomorrow now

simmered a while before adding chopped watercress while on the heat just for a little while. Removed from heat and stirred in double cream. Blitzed

Neighbour's online food delivery gave her a duplicate bag of watercress and this is what it amounts to when hand chopped

A weekend to remember at The Watercress Line!

Our Class 150 'Sprinter' Unit made its debut on Sunday 15th of February as visitors braved the weather to be a part of the big day.

Missed out on Sunday? The unit will be operating passenger services this week during Magic of Locomotion.

She's obsessed with #FlyingScotsman so her'n'Dad went on it for a big birthday. Then the train set followed for Christmas some years (of banging on and on about one) later 😆

I use cubed root vegetables like celery root or squash. In the winter I use frozen vegetables like peas, corn, or broccoli. Watercress is a nice green garnish.

RSVP Recipe for Foie Gras and Fava bean soup (serves 6) 225g/ 1/2lb fresh Fava beans, shelled 1 shallot, finely chopped 1 Tbsp fresh mint leaves, finely chopped 170g/ 6oz paté de foie gras 1.) Cook the beans in salted, boiling water for 5 minutes or until just tender. Refresh them in cold water then slip them out of their skins 2.) Combine the beans with the shallot and mint and toss in vinaigrette 3.) Slice the foie gras thinly and serve on bed of bean salad. Recipe for Deviled Lamb's Tongue (serves 2) 1 lamb's tongue 500ml / 1 pint Court Bouillon 100g / 4oz breadcrumbs 2 Tbsp fresh parsley, chopped 50g butter 2 sprigs watercress Salt and pepper 1.) Poach the lamb's tongue in the Court Bouillon for 1 hour, then cool. 2.) Slice the tongue into tick slices and place onto a greased baking tray. Spread with mustard and sprinkle with breadcrumbs. Melt the butter and baste the tongue slices. 3.) Grill the tongue under the grill until golden-brown. Serve with a gravy and garnish with watercress. Recipe for Fava Bean Risotto (serves 4) 450g / 1lb Fava beans, shelled 3 Tbsp extra-virgin olive oil 4 shallots, peeled and finely chopped 2 cloves garlic, peeled and crushed 500g / 1 lb 2oz arborist risotto rice 1 small glass of dry white wine 1.7ltr/ 3 pints vegetable stock 2 sprigs fresh thyme, finely chopped 140g /5oz pecorino 1.) Gently fry the shallots in 2 tablespoons of olive oil until soft and translucent. Add the beans and garlic, stir and cook for a couple of minutes. Turn the heat up slightly, add the rice to the pan and cook, stirring for another 2 minutes. In a separate pan, heat the stock over a very low heat. 2.) Add the wine and allow to boil rapidly until all the liquid is absorbed. Turn the heat down and add the hot stock, small amounts at a time. Stir the rice after each addition and make sure all the stock is absorbed before adding the next ladle. 3.) Finely grate half the pecorino and shave the rest with a vegetable peeler. When all the stock has been added to the rice, stir in the thyme. Cook until all the liquid has been absorbed and the rice is cooked al dented. Remove from the heat, stir in the finely grated pecorino and season with a touch of salt and freshly ground black pepper. 4.) To serve, drizzle with the remaining olive oil and sprinkle with pecorino shavings.

First time making gnocchi from scratch tonight, and they've turned out okay. Served with a homemade winter pesto made from garlic, pine nuts, parmesan, baby spinach, rocket and watercress.

Delighted that the 'South Coast's Forgotten Railway Workers' exhibition will be at the Watercress Line this February half-term!

It's being hosted in the viewing gallery at Ropley - pop in & find out more about the people who kept the area's railways running in the past!
