Tripe à la mode de James Caan was quite popular in the 1960s.
I've never really thought of tripe as something that could be "à la mode" until now.

haven't ever cooked tripe but as it's #worldtripeday - at least according to @tripeuk.bsky.social - i am remembering this meat feast of andouille, boudin noir and tolouse sausages with fried apples and pomme mousseline from back in my henry VIII lockdown eating phase. enjoyed some lovely wines too.
