today last year i found a partridge in the freezer so wrapped it in bacon, butter, crushed juniper berries and thyme then roasted. serving with baked pear and fried gnocchi tossed with red cabbage. sauce was roasting jus made with pear cider. it was really good and needs to happen again.

the ghosts of christmas past as a risotto tonight. cooked with some cured ham I got in france, brussels sprouts, half a baron bigod and some chopped chestnuts. so good!

had my favourite cousins over from Ireland for lunch. pot roast chicken with gnocchi cooked in calabrian sausage fat with a cambozola sauce. delicious though off message with january austerity vibes 😊

getting back into a less indulgent pattern after a lovely xmas of treats and big meals. beans and chickpeas cooked in gammon stock with sofrito, spinach and tinned tomatoes. bit of chilli and smoked paprika for heat. fennel seeds for a whiff of mystery. gonna eat with great buttered naan 😋

oooh that ham was nice. cooked with pomegranate molasses as the glaze. served with garlic fried sprouts - turns out I now love sprouts - and caramelised pineapple slices. delicious!

hawksmoor was superb. we had crab, bone marrow, caeser salad to start. I had a Shirley Temple and a cornflake milk milkshake. chateaubriand served rare for my main. Black Forest pavolova for dessert. best friends, lovely day.

three years ago is the last time I did ‘the full English’ for Christmas. brined & butter roasted norfolk bronze, smoked british gammon marmalade glaze, black pudding stuffing, apples, walnuts and PX prunes, negroni cranberry sauce, duck fat roasties, savoy cabbage vichy carrots. christmas completed.
