leftover morteau sausage cut into matchsticks and fried then parked. mushrooms and leftover green beans into the rendered fat with garlic then bubbled with stock and double cream, more grated comte on service with a big green salad. so much flavour.

smoked mackerel on cream cheese with capers, pickled shallots and black pepper on toasted sourdough bagel. I was looking at buying one at the station earlier but £7.50? would rather DIY 😋

it's teddy's 12th birthday next week and he has requested butter chicken so gonna do a wee test run first. can't get my chicken thighs into marinade until this PM but gonna try and fast track for tonight. watch this space. they need to be smoke grilled before slipping into that butter masala sauce.

getting dark early isn’t all doom and gloom. fried some gnocchi in bacon fat & garlic then bubbled them with chicken stock, cider, crème fraiche. dusted with 2 year old comte and bubbled under the grill to go with succulent pork chops, fried apples & green beans. haven’t done this for ages! 😋

deliciously indulgent dinner playing off a few previous iterations. pot roast chicken in a cider sauce with morteau sausage, wee spuds, green beans and a cambozola blue cheese sauce. cheering me up after the mighty reds got whacked 😌😋😁

late lunch after a 90 minute schvitz at the wick. chipotle in adobo blitzed with honey and garlic smeared over the toast. love roll over treats like this. number one son treating us all to chick n sours tonight. le weekend! 😋

not elegant but delicious chicken thighs roasted with a puree of chipotle on adobo blitzed with achiote, cumin, garlic, honey, mandarin zest, oregano. served with leftover quinoa, sliced avocado and pico de gallo. whole family tucked in and now I’m pleasantly stuffed 😋😋😋

after a week of baguette, fromage, and saucisson I’m doubling down on fibre with a spicy bean and spinach casserole flavoured with jelly stock, breton cider, smoked paprika and fennel seeds. serving with steamed quinoa 🌿😋

haven't ever cooked tripe but as it's #worldtripeday - at least according to @tripeuk.bsky.social - i am remembering this meat feast of andouille, boudin noir and tolouse sausages with fried apples and pomme mousseline from back in my henry VIII lockdown eating phase. enjoyed some lovely wines too.

made some arancini with leftover sausage and tomato risotto. stuffed with taleggio which has bubbled out onto the pan. deliciously stinky. having this with another big green salad 😋

did a roast tomato and Calabrian sausage risotto dense with chopped vegetables as it’s a great way to stealth them into number one son. with a big green chopped salad.
