When I roast a chicken, after dinner I strip the meat off carcass then make a stock with the bones, veg and trimmings I reduce the stock and strain it
Then add meat, cream, mushrooms, garlic, diced onion, wine, seasoning and herbs.
Then bake a chicken pie with puff pastry
