I had to quote post this! Potatoes are a good source of energy! I am a huge potato fan because of this exact reason! It can take on so many forms and identities! They are delicious and a great addition to so many meals! I can honestly say I could eat potatoes every day! #beh353 @beh353.bsky.social

I was most excited about the rice with beans and sausages and the taquitos this Thanksgiving. The taquitos are tortillas rolled up, fried, and filled with chicken, peppers, and potatoes! I'm huge on side dishes, so a special mention to the ensalada de papas! #beh353 @beh353.bsky.social
