The best. So easy. I let the dough sit in the fridge for several days. I may replace some of the AP with a little whole wheat or rye flour or add malt powder. I typically turn it into rolls, coat with water/egg white and bake in a very well heated oven on a pre-heated stone.

I don't want to say I am able to "handle" the ongoing deluge of bad things, but I have had a lot of trauma therapy, and let me tell you, shoving your finger in a wound and just digging around in there to remind yourself the wound exists doesn't really help anybody most of the time.

i’ve been sick this week and can only engage with so much news anyway but just pondering the horrible spending bill and the medicaid and SNAP cuts to it, and wondering— sure, it’s always a crapshoot on if our calls change things, but there are corporate interests this hurts
