Roast beef, roasted potatoes & carrots with leftover red wine short rib gravy. Eye of round was placed in 500 F oven, turned down to 475, for 7 minutes per pound. Turn oven off; do not peek for 2.5 hours. Meat should read 145 F. Works perfectly in well insulated oven. 🍜 #food #foodsky
