A little late this year but if you saved your turkey carcass, here’s my late mom’s TURKEY SOUP RECIPE - her way of spinning bones into gold, merely the best on the planet. Peasant food with peasant surgery involving carcass disassembling & pulling meat from bones but so worth it!
INGREDIENTS 1 turkey carcass with leftover turkey, if possible 11/2 cups carrots, sliced 1 cup celery or parsley, chopped 2 onions, chunked or sliced 2 bay leaves 1 tablespoon garlic, minced or smashed 1/2 teaspoon marjoram, dried 1 can diced tomatoes, with juice 1/2 cup split peas 1/2 cup dried lentils 1/2 cup beans (dried navy beans or other small white beans) 1 tablespoon horseradish (optional, but adds flavor) 1/2 cup old-fashioned barley low-salt chicken broth, as much as needed any leftover gravy (to taste) up to 3/4 cup stuffing Tabasco, dash salt and fresh ground pepper (to taste) INSTRUCTIONS Boil carcass with 1/2 of the celery/parsley and 1/2 of the carrots and 1 sliced onion in water, to cover. When meat separates from the small bones, remove those bones and leave the large bones until they are meat-free — you may have to pull some meat off the bone. Add any leftover turkey, gravy and add up to 3/4 cup of stuffing. Add the rest of the greens, onion and carrots along with the marjoram, garlic, canned tomatoes, split peas, lentils, white beans and water (if necessary). Cover and boil just below a hard boil for 30 minutes. If you want, now would be the time to add the horseradish. After 30 minutes, when the soup seems to be blending, add the barley and check whether more liquid is needed; if so, add chicken broth and let simmer. The longer it cooks, the better it will taste, but it should be simmered for at least another 30 minutes. Add salt and pepper to taste. Add a shot of Tabasco to give a little zing to the soup, but be careful if you're a Minnesotan!
