Super excited to share our new publication identifying the food preservative, sorbic acid, as a new PTM. Even cooler is that the deacylation and acylation of this PTM is catalyzed by the non-canonical activity of Class I HDACs using free sorbate (not sorbyl-CoA) www.science.org/doi/10.1126/...
