Tom’s story is a great reminder of how the best diet is the one you’re willing to follow. Tom ate the Spicy Southwest Salad at least once a day. It is not the most healthy meal in the world, but it was delicious and enjoyable to Tom which meant he could "stay on track."

Fat shaming leads to anxiety, depression, and self destructive behavior like overeating. This makes fat shaming counterproductive. I will incorporate this moving forward by being mindful, considerate, respectful, and kind when talking about weight with others.

My biggest barrier to healthy eating is lack of time to plan, shop, prepare, and cook healthy foods. I spend most of my time in class and studying. When I don't have time to cook and pack lunch, I buy food from the Longwood Galleria even though it is not as healthy.

Supplements can make structure/function claims, but they must have a disclaimer. I found this zinc supplement in my cabinet, which displays the disclaimer in the fine print on the back of the bottle. Manufacturers can follow the rules and still manipulate the marketing.

I researched the low FODMAP diet, which stands for fermentable oligosaccharides, disaccharides, monosaccharides, and polyols. These are carbohydrates that are difficult for the body to digest, so reducing consumption of them can ease digestive discomfort.

One of my usual food choices is nachos. To make them more nutrient dense, I could swap regular tortilla chips for whole grain chips and add peppers, spinach, and avocado to get more fiber. I could also add chicken, and black beans to get more protein.
