I also bottled 6x450ml bottles of the filtered wonju diluted at a 2:1 ratio with water to enjoy as makgeolli. This needs 3 days to a week in the fridge for the flavors to mature.
Any residual sugars will create certification during this time.

Traditionally, makgeolli is filtered by pouring the wonju into a filter bag and hand squeezing the liquid out. Some of the sediment makes it through the cloth and you end up with a roughly filtered rice wine.

I use a brew bag and a cheap screw press made for pursuing fruit and cheese making.

Time to filter this wonju into makgeolli/yakju/takju.

Should yield 20ish bottles depending on dilution and bottle size.

Probably gonna put some in a half gallon jar or two to separate so I can cold crash and separate into yakju and takju.
The rest will be makgeolli or wonju.

My South Korea notes may be over, but I have been enjoying some Makgeolli grabbed from Hai Na to remind me of time out there. It may look like spunk but it is tasty and a very easy to drink 3% abv.

Okay. Tried the makgeolli in my little ceramic Chinese bowl that are a bazillion years old (my Nana's dad? Grandpa? Was some sort of mercenary and that's how they bowls got to us idk? I never know how much she says is true) and it's a good time. Like I get why everything is like "don't sip".

Tomorrow I'm gonna mix some kukicha with miso and a bit of makgeolli and slather it on a block of tofu and let it sit for 2-3 months. It will be very exciting to see what happened to it in March
