2.5 measures of rye
1.5 of mezcal
1 of Amaro Fernet
.5 of bergamot
Dash saline solution
2 dashes frankincense bitters
Stir with ice, strain into a rocks glass, garnish with a grapefruit twist. 1/

He made it for his bar, Malpractice (Portland, OR). It is a Baby Turtle riff that highlights the grassy / funky notes of Oaxacan rum. It’s to die for.

ACID-ADJUSTED GRAPEFRUIT (to lime):
100 ml. fresh grapefruit juice
2.7 g. citric acid
1.3 g. malic acid
combine and mix to dissolve

It was created by Morgan Schick, who oversaw the bar at the time. The flavors all work together and you get a nice mouthfeel from the foam.

METHOD
add all to shaker tin / shake without ice (“dry shake”) / add ice / shake until chilled / strain over a BFC in a rocks glass / garnish with cinnamon

riff on the 1937 Café Royale version
2 oz reposado tequila
¾ oz Cocchi Americano
¾ oz dry curacao
5 drops 1:4 saline
grapefruit twist spritz

This 2:¾:¾ spec is what I use for dry vermouth, but with Cocchi Americano, I think it should probably be 2:1:½

- 1/4 oz yuzu juice
- 2 dashes grapefruit bitters
- 2 drops saline solution

served up in a coupe, expressed a lemon peel, added 3 drops toasted sesame oil for garnish

Cocktail of the day is the High Five by Alex Day. Bright + refreshing!

1 1/2 oz gin
1/2 oz Aperol
1 oz freshly squeezed grapefruit juice
1/2 oz freshly squeezed lime juice
1/2 oz simple syrup
(Optional: 3 drops saline)

Shake with ice, then double strain into a coupe. Enjoy!
