Oh, SO much offal. My granddad was a massive Francophile, so that added an even further guts and giblets dimension to a culinary repertoire already honed to hearts and brains by WW2 rationing. Her oxtail was famous, and now I'm wondering which bone would best lend itself to Osso Buco. Femur, maybe?
