We've done it with enchiladas and it's magic. I line the tray we cook them in with glad wrap. Then put them in, fold over the wrap, freeze them, then pop them out of the dish and into a ziplock bag.

To cook them I take off the plastic, pop them in the dish, add sauce on top, and then in the oven.
