For our rivergarden eggplants I don´t need to salt and they are not all "modern", I guess. Bought eggplants I salt, too. In historical sefardic recipes is the process of salting included, I hope to remember correctly 🤔

Yes! I too have always salted & rinsed to draw out bitterness! But I kept seeing more and more cooks on TV not doing that. Apparently the jury's out on whether it's still necessary👇 I do like the point here that quite apart from bitterness, salting helps stop the plant from absorbing too much oil.

Now the bitterness has been bred out of the aubergine, the need to draw out the juices before cooking is a moot point

Mine too, which is why I usually don't keep any form of popcorn in the house.
