Im gonna do this tomorrow with some thai chilies
For the ferment:
As many habaneros as you can get (I used 7 lbs.)
Two large sweet onions
Two heads garlic, peeled
7% salt brine (by weight) to cover it all
Pack everything into a breathable fermentation jar, weight the contents, put it in a cool, dark location and forget about it for two months.

I started getting into making sourdough ryes every week around the same time as making a serious reduction in my refined sugar intake. Now sweets taste not one scintilla as good as my bread. I'd rather have a slice toasted with some butter than candy or cake or whatever.
