Sheet pan with water and silicone spacers. The turkey roasting pan will be held just above the surface of the water.

Turkey came out of the brine at 12:30, after 40 hours. After spatchcocking and trussing, it is now resting, draped over its inverted roasting rack. I have placed ice packs on the breast to keep it cold while the legs warm up to ambient. Stuffing is divided into two portions...

The stuffing proper will consist of white, rye, and cornbread cubes, sauteed onions and celery with a bit of water chestnut, apples, and Zante currants, taken up in a rich, well-browned turkey stock with some eggs, then seasoned with pepper, nutmeg, sage, marjoram, and rosemary.

After conferring with my mother, I have settled upon my roasting strategy. The bird will be spatchcocked and draped over an upside-down wire rack in a big roasting pan, with a large mound of stuffing underneath it. The bottom of the pan will be in a Bain Marie-type setup so it doesn't burn.

After ten years, I finally get to host a big family thanksgiving dinner again. First milestone: turkey is thawed and fully immersed in a brine consisting of 3.5 liters of sake, 2 liters of water, 300mL of 100 proof vodka, 1 rounded cup of kosher salt, 1 cup jaggery, 1/2 cup sugar, and spices....

Just heard Zohran Mamdani interviewed by David Remnick on the New Yorker Radio Hour. First time I ever really heard him speak at length, and all I can say is wow, that guy is really something. Obama-level rhetorical skills, just off the charts. I just hope he has good security.

Throwing this out into the ether: The one and only reason the US has de facto ruled the free world these last 80 years is the seemingly impenetrable strength of our legally mandated democratic institutions. That take by the world is shook really bad right now, like never before.

In the wake of the shameful recission bill that just passed, I want to put it out there that the American public can make up the entire hole they just blew in the budget of the CPB for LESS THAN TWO DOLLARS A YEAR EACH! Consider contributing!
July 19, 2025 at 11:08 PM
One small silver lining in this abject horror show of a budget bill is that the provisions gutting both the NIH and the NSF with 40% budget cuts and a 15% indirect rate cap got stripped out at the last second by the parliamentarian.....

I guess I can't blame our Dem pols for focusing so much Medicaid in this big ugly bill, but I feel like that issue is upstaging some other truly awful things about it, like the fact that it is going to immediately and irreparably damage university-based scientific research in America.

No Kings march from Dolores Park to Civic Center, San Francisco. The massive crowd, seen here walking up Dolores Street filled the entire 1.5 mile route from Mission Dolores Park to Civic Center. By the time these people arrived, the plaza was already full, and there's over half a mile of them left!

...So where I left this narrative about vaccines is with the explanation that your body produces this immense repertoire of lymphocytes, each with its own incredibly precise, heritable molecular specificity due to the shuffling process (aka V-D(J) recombination) that I explained before.

Keeping Up With the Millers: Stephen Miller and His Wife, Katie, Found Love in a Hateful Place
Trump’s favorite young power couple—after Jared and Ivanka and Don Jr. and Kimberly, that is—have carved out a special place in the administration for their rhetoric and ideology.

Basically, our genome (and that of all vertebrates) contains these loci where there are multiple huge arrays of 500 or more similar but different coding segments, spanning millions of base pairs of DNA, that can be randomly stitched together to create an astronomical number of combinations...

An indispensable key concept: the relationship between DNA and proteins. I cannot begin to explain how all this immune system stuff works to the uninitiated without first explaining some basic aspects of molecular biology. The first and most fundamental of these concepts is that DNA = protein.
June 8, 2025 at 6:36 AM
So at the broadest conceptual level, the mechanism whereby the immune system distinguishes self from non-self is based in the same principle as all of evolution -- natural selection. That is to say, selective filters are applied to a wide-ranging stochastic process, winnowing out the needed cells
June 8, 2025 at 6:09 AM
So first off, I'll try to answer the first question, i.e. what is the immune system, in a bit more detail. The immune system consists of a very large number of cells (roughly a trillion of them at any one time), that inhabit all of our bodies from birth to death.
June 8, 2025 at 5:02 AM
So what exactly is the immune system, and what does it do, and how? These are of course the most fundamental questions for the uninitiated, and will thus be my point of entry into this vastly complex but fascinating subject.

I'm a PhD developmental immunologist with 30 years of experience in academic immunology research. How many people who see this post are interested in me explaining exactly why immunization is the most obvious, no-brainer thing you can do to avoid dying of some horrible disease? Like or reply yes.

Looks like all the the hopium gas has leaked out of this morning's denial stage market rally. If we reach the close without any major reversals from Trump, I guess the bargaining stage will start tomorrow.
