For me a *great* burger has to be able to be medium rare, so smash burgers can only be good at best. The steakhouse burger's problems were things like being tall, falling apart, or yeah a too plump patty. But what actually needs to be acknowledged in all this...is the importance of the bun
i've seen more and more people dissatisfied with the omnipresence of the smash burger and yet i see none offering an alternative that's not a regression to the overly plump steakhouse burgers that necessitated its smashing. just a lot of grousing with no new ideas. very curious!
