Three pounds of boneless, skinless chicken thighs One pound of potatoes One bunch of green onions Salt Pepper Paprika Six cloves of crushed garlic Three teaspoons of Jamaican yellow curry powder One sprig of rosemary Two sprigs of thyme

Transfer chicken to large pot or Dutch oven Add water until chicken is just covered Add chopped green onions and stir Place rosemary and thyme on top and then braise for 20 minutes While chicken is braising, cube potatoes and parboil for five minutes When 20 minutes have passed, remove rosemary and thyme but save before adding parboiled potatoes and mix into chicken Put rosemary and thyme back into the pot and braise for another 30 minutes Remove rosemary and thyme and let water reduce by half via braising Keep an eye on it so it doesn't burn

Cube chicken thighs and put in bowl Add salt, pepper, paprika, crushed garlic, and curry powder Mix until evenly distributed and chicken has yellow color Cover and put in fridge for either one hour or overnight (I suggest overnight) Brown chicken for 5-7 minutes in pan with neutral oil (I used canola)

Just heard thunder in the distance, so I'm thinking of this passage from Charlotte Brontë's Villette again.
