my most important opinion is that all regional pizzas are vital parts of the overall pizza ecosystem. you hate chicago deep dish? then you hate pizza. you hate provel cheese? you hate pizza. you hate little caesar? he is the emperor. show some respect. all pizza is canon

Lo mein with leftover smoked brisket. Recently bought a cabinet smoker, running out of ways to use up brisket at this point.

Fresh parboiled noodles, cabbage/carrot/onion/scallion, sliced bbq brisket, stir fried with oyster, soy and a touch of hoisin.

A tiny bit sweet, but pretty damn tasty.

Tiki Thai in Reston, VA. Excellent food and drink, especially the clarified Mai Tai.

Last night of my business trip, so we drove to Permanent Vacation in Maitland, FL. Absolutely wonderful cocktails and food. Tried the Mai tai (proper funky), the Bone of Neil (coffee and burnt citrus, amazing), the Helldiver (herbal pearl diver with turmeric coconut ice) and a Zombie (potent!).

There’s a real link between AI writing and Silicon Valley meal replacement drinks and the entire fuckin swath of maximizing the human experience and it’s that they view pleasure as being unhelpful to life. I don’t want a drink that replaces a meal, I don’t want a book summary, I want to savor things

After years of waiting, 12 hours of airport hell and 3 hours of driving, I finally made it to the Mai-Kai. The drinks, the food, the decor and the entertainment were all outstanding. I can now see why this is considered one of the best venues in the country.

Forgot I had a little milk-clarified Zombie (inspired by a post I saw from the Kaona Room in Miami) left in the fridge. Can’t let that go to waste, so a quick cheers to a safe flight.

Don’t have a Vision Pro, but at least I found a use for the spatial camera setting on my phone. Converted a few pics to red/cyan anaglyph, turned out pretty good!

(Taken at the Meow Wolf Convergence Station in Denver, CO a few weeks back.)

Packing up for my flight to FL tonight (sadly for business, not Tiki-a-Go-Go). On the bright side, #MaiKai on Saturday, so at least I'll get a *little* relaxation time in. Happy to take recommendations for evening dining or events if anyone has anything for the greater Orlando area.

Recently got back from a trip to Denver. Lovely food town. Highlight was probably Hell or High Water, which we hit twice while in town. Absolutely my vibe, and the food downstairs was phenomenal.

Ernest Hemmingway's Hamburger recipe. Can attest, it's actually pretty good.

Slowly, painstakingly getting into roasting my own coffee beans using a Kaldi roaster and the shittiest portable gas stove I could find in the basement. This is Monsooned Malabar AA from India, city-ish roast. Need a lot more practice, but not bad for winging it.

Is it silly to want to fly to Dublin just for taco chips and a spice bag? Perhaps. Still.

Can I stop seeing toots and sweets and twarts from people going "support the wapo, it has good people working there"
SCOOP: WaPo Opinion editor David Shipley is out. Jeff Bezos emails staff about a change to Post Opinions: "We are going to be writing every day in support and defense of two pillars: personal liberties and free markets."

Egg drop soup for lunch, which really shouldn’t be the luxury it feels like in this day and age. H/t to the Woks of Life and Lucas Sin for the tips.
