Lo mein with leftover smoked brisket. Recently bought a cabinet smoker, running out of ways to use up brisket at this point.

Fresh parboiled noodles, cabbage/carrot/onion/scallion, sliced bbq brisket, stir fried with oyster, soy and a touch of hoisin.

A tiny bit sweet, but pretty damn tasty.

The end of happy hour snaquiri toast to Neil. If you dig the Mai Kai’s black Magic, try the Bone of Neil (I think it’s better and has a more interesting evolution).

Watched the staff batch cocktails and syrups while we drank, they were extremely friendly and answered all my annoying cocktail nerd questions with grace, was even able to sample their house falernum by itself. They are tiny, but they do things right.

Last night of my business trip, so we drove to Permanent Vacation in Maitland, FL. Absolutely wonderful cocktails and food. Tried the Mai tai (proper funky), the Bone of Neil (coffee and burnt citrus, amazing), the Helldiver (herbal pearl diver with turmeric coconut ice) and a Zombie (potent!).

The food was outstanding. We shared a pupu platter with bacon-wrapped chicken, pepper/cassava cheese balls, egg rolls and crab Rangoon. Dinner was a massive plate of various grilled meats and dipping sauces (ribs, marinated rib eye, short rib). Everything was delicious.

After years of waiting, 12 hours of airport hell and 3 hours of driving, I finally made it to the Mai-Kai. The drinks, the food, the decor and the entertainment were all outstanding. I can now see why this is considered one of the best venues in the country.

Forgot I had a little milk-clarified Zombie (inspired by a post I saw from the Kaona Room in Miami) left in the fridge. Can’t let that go to waste, so a quick cheers to a safe flight.

Don’t have a Vision Pro, but at least I found a use for the spatial camera setting on my phone. Converted a few pics to red/cyan anaglyph, turned out pretty good!

Also visited Casa Bonita. Food was horrible, but it’s almost beside the point. More restaurants should be this fun to explore.

Recently got back from a trip to Denver. Lovely food town. Highlight was probably Hell or High Water, which we hit twice while in town. Absolutely my vibe, and the food downstairs was phenomenal.

Afterwards went for a few cocktails at Lost Island Vibes nearby and a quick spice bag and a pint from the Irish Channel Pub before the long, dark ride home. It was a great birthday present trip from my s/o.

I won’t give the whole show away, but it was a great (mostly) one man show, like an extended riff on a Good Eats episode. It turns out I really needed this, AB was in top form, jokes and stories landed, and a cameo by @luckyyates.bsky.social stole the early show.

Slowly, painstakingly getting into roasting my own coffee beans using a Kaldi roaster and the shittiest portable gas stove I could find in the basement. This is Monsooned Malabar AA from India, city-ish roast. Need a lot more practice, but not bad for winging it.
