As I understand it tortillas are the superior breadstuff for space because they don't produce crumbs (or at least, not nearly as much as other breads might), and that's an advantage in microgravity.
you may be amused to learn that NASA held a teleconference the other day about tomorrow's CRS-32 cargo launch, at which they mentioned that they are flying up exactly 1,262 tortillas to the ISS
