Obesity can be caused by more than just lifestyle choices. It could be due to genetics and/or one’s mental health. This is important to remember as we shouldn’t judge someone by how they look. In the future I am going to approach this topic with more empathy and respect. @beh353.bsky.social #beh353

I found this interesting because I don’t usually eat during these times for any of these meals. My biggest barrier is finding time to plan meals and eat. Sometimes I don’t eat breakfast or lunch. If I eat lunch it’s mostly after school which is around 3-4PM. @beh353.bsky.social #beh353

The biggest barrier that I saw was the lack of time to plan, shop, prepare and cook healthy foods. l’m a commuter student who drives about 2 hours to school and 2 hours back every day. I found this interesting because I knew that spinach had a lot of benefits but didn’t realize that it contains vitamins. I found out that it has Vitamin A, C, E, and B vitamins as well as magnesium. I want to try this salad as it is a very nutrient dense salad. The kale is very high in vitamins and minerals which is good for the body. And strawberries and almonds are also high in vitamins. I think adding some protein such as chick could make it more nutrient dense. @beh353.bsky.social #beh353

A dish that my family makes is called “goi cuon” also called “spring rolls.” To make this dish more nutrient dense, I could swap the wrapper which is usually rice paper for brown rice paper. I could also swap the regular used vermicelli noodles for mung bean noodles. @beh353.bsky.social #beh353

I was tested to see if I had high cholesterol and it turns out that I do have high cholesterol. So, I’ve also been trying to find a way to make meals that cater to helping me lower my cholesterol levels. I think that I will try to bring more of these foods into my diet. @beh353.bsky.social #beh353

I think the 24 hours that I spent recording everything was accurate. In my opinion, I think it was easy to do. However, I feel that if it was longer than 24 hours it would be harder to do. Something that surprised me about my diet is that I am lacking fiber and minerals.

I didn’t realize that fruits can offer protein. I thought that fruits normally offer vitamins and minerals. I find it interesting that some fruits offer more protein than others. Fun fact: I love jackfruit. When you let it get super ripe, it becomes soft and super sweet.
