Peppers are abundant right now. I cut them carefuly into their natural 3 or 4 segments and take the pith (sorry,) before freezing skin side down on a bit of tin foil.

When frozen solid, into a zip lock bag. They defrost in 5 mins and you'll never know the difference.

I came across this recipe on the @nytimes the other day. Very simple to make and a greater user-upper of any going over tomatoes which are common this time of year.

Any white fish works, but I recommend the thinly sliced courgette.
